I really like three games a lot. Half-Life 2, Far Cry, and Oblivion.
But if I had to chose it would probably be Ovlivion for the fact that there is just so much stuff to do. You can also make or download more stuff to do if you think you've done it all.

That's hard to answer, because there are different categories...
BTW, Halo is a console game, does not count.
Nethack is a port of a mainframe game, does not count.

Nothing will ever come close to the fear of having a marine throw a grenade in your corner inside a dusty warehouse while aliens are reeking havoc everywhere else.
