Could breeding and selective reproduction result in humans and animals getting bigger hearts? Lance Armstrong and animals like Secretariat set records and times that are beyond belief and they both have huge physical hearts. Can we breed this?

You can do ultrasounds on horses (and people too I suppose) and determine heart size and could selectively breed for that trait. Another thing they are looking at is the size of the airway passage through the throat and if there are any constrictions.

The heart grows and shrinks as a function of demand.

It also seems to grow and shrink as a function of our mental state.
