It's a pre-conceived idea that you have about someone based solely on something that you know about them - e.g., race, sexual orientation, sex, etc.

let me try to answer this in as lay terms as possible. Let me give you a scenerio and ask you to think about it for a moment.
One day you see a young beautiful girl with a old balding man holding hands and looking like as if they are very close. What comes to your mind besides "that lucky bald fellow??"
If i hypothesize correctly you would probably think that that gal is either a gold digger, prostitute or social escort. Now that is a stereotype based on your perception on the wider category of such cases that come to your mind. Because you can recall and have this image in your head about such women you will categorise this lady in the scenerio as one of them.
So you can see how dangerous can this stereotype can be. It means that if you do not know anything about that person but if he belong to a certain race, social groop or community, you would characterise him with traits found in the group he belongs to. For example, in this recent spates of terrorism, if you now see someone from the Islam community you would tend to attach to him those negative traits of these terrroists.
So be careful when evalauting people. Constantly test to see if you are stereotyping and look for other evidence.

A simplified, generalized way of grouping or characterizing people based upon something like education, class, money, skin color, sex, religion etc.
It's applying the traits of one or a few people of a particular group or type to ALL members of this group or type. It's a quick and easy way for the mind to assimilate and understand people and things, or to orgnaize information, but a very inaccurate reflection of the true variety amongst people of all groups and types. "All cowboys wear cowboy hats, chew tobacco, talk with a drawl, drive pickup trucks and live in trailer parks where they beat their wives." This is an example of stereotyping. It is the automatic assumption that EVERY cowboy does the pre-mentioned things.

An oversimplified image or type; a generalization.
Examples:
The stereotype of New Yorkers is that they are loud and rude.
Some people stereotype Arabs; they think all Arabs are crazy terrorists.
Not all Irish people are drunks; that is just a stereotype.

All cowboys wear funny looking hats.
All white people are rednecks.
All jews are rich..
Those are all stereotypes. It's generalizing a whole class of people by saying one thing about all of them.
