Here's how I've played with three.
Two will play against one. The side with two players has to play the ball into the singles court but the single player can play the ball into the doubles alley. And the side with two players will always do the serving.
After every game the players rotate. So if you start out on the singles side receiving serve, the next game you'll switch to the doubles side and serve, then the next game you'll stay on the doubles side but play the net. Make sense??!!
The way I've scored it is if the person playing the singles side wins the game they get 2 points. If the doubles side wins the game the players get 1 point each. First person to get 20 wins. Hope that helps!

Australian Doubles-where 2 players play against 1. The side where there's 2 players can hit only up to the singles sidelines. The solo player can hit up to the doubles sideline. The solo player serves first then you rotate after every game.
Australian formation is when the server and his/her net person is in an "I" formation (same side of the court-server & net person towards the middle of the court).

Canadian doubles: where the best 1 of the 3 plays vs. the other 2. The singles player can hit the ball into the doubles alley, but the doubles team can only hit in the singles court (no alleys).

Yes, it's called "Canadian Doubles" -- The best player should be matched against the other two, with two basic variations
A) Single Player - Can hit into the alleys, but only covers the singles court.
B) Reverse this - Doubles players hit into doubles and guard singles, single player does the opposite. Obviously, this variation is very tough on the single player..
C) Be creative, and make up your own variation(s)
I still don't know why it's called Canadian Doubles

2 v. 1 is called Canadian Doubles. Australian doubles is a formation where you and your partner start the point on the same side of the court.

If one person is better than the other two, you can do 2 vs. 1. This is called "French Doubles."
