When co2 gas is dissolved in water under pressure it forms carbonic acid.The co2 at normal pressure is nearly insoluble in water. This process is used in the soda water formation.

There are 2 things happening, considering both CO2 and water are pure :
1. the physical dissolution of CO2
2. following chemical equilibriums occur :
CO2 + H2O <=> HCO3- + H+
HCO3- + H2O <=> H2CO3 + H+
The second one is neglectable, so the solution would mostly contain HCO3- and H+

You can do a little magic with carbon dioxide. You can change “water” to “milk” just by blowing into it. In reality, the water is a saturated solution of calcium hydroxide, Ca(OH)2, which is clear. Prepare the solution by dissolving 2 g in 1 L of water and by filtering it. Solution of calcium hydroxide will react with carbon dioxide in the air over a period of time which will result in cloudiness. The solution has to be filtered before use. Blowing carbon dioxide into the solution results in the formation of calcium carbonate, which is insoluble and precipitates out of the solution making it milky white, according to the simplified equation:
Ca(OH)2 + CO2 | CaCO3 + H2O
