So that your fingers & joints can freely move. Without the extra space, you wouldn't be able to use your hands & fingers. Dexterity wouldn't be there!

so you'd have a bit of skin to move the fingers around with. if you didn't have it, your fingers would not have that range, and you won't be able to use them.
it's like you have some extra skin in your backside so you could bend.
