In traditional anime, big, wide eyes are considered friendly (innocent, childlike) while small eyes are associated with villains.
The earliest japanese anime artists were heavily influenced by comic strips and cartoons of Betty Boop and Mickey Mouse (both of whom had large eyes) brought over by Americans even before WWII.
It has nothing to do with wanting to look caucasian/white/anglo...In anime, the use of different hair colors and styles distinguish one character from another because the art can be so stylized that many characters look alike...
Why do so many white people assume everybody wants to be white?

The Japanese people have been influenced by the Western media which feeds them the Western ideal of beauty. Big eyes are beautiful, and small eyes are ugly. Most Japanese cannot live up to the beauty ideal that they see in the Western movies, but they can make their anime fit the standard of beauty, which is of course based on Caucasian features: light hair and skin color, big eyes and boobs, etc, etc. That is why you see big eyes in anime, and that is why cosmetic industries, including plastic surgery, are making a lot of money in Japan.

It is more attractive, see anime is almost like charactatures but alot prettier. The eyes catch the feeling the drawing that artist is depicting. I draw anime myself, my favorite anime character to draw is Inuyasha! Inuyasha has long eyes his eyes aren't as wide as most anime characters.

They usually use big eyes on girl, in a way to make them look more cute and innocent. Also, it's a distinguishing factor between male characters (who usually have smaller eyes) and female characters.

I've heard that the big eyes and bright hair colors are their interpretation of kind of making fun of caucasians.. but in an artistic way.

No ur all wrong!!! Big eyes in Anime meens that the character is a "Good" charactoer, small eyes are "bad" characters. Its the truth.
