I love them ALL! I'd have to say emerald because it's my birthstone, but I only have sapphire jewelery... none of the others.
I'm happy with garnet instead of rubies... good enough, less expensive. I can dig Jade in place of an emerald... but I don't think there's a good substitute for a sapphire.

Good question.
That would be hard to choose. I love them all. If I had to pick, I'd probably pick the sapphire because it comes in a wide array of colors. Even though most colors in the retail stores are lab or treated, the natural ones are beautiful. I've got an earring and pendant set in natural purple sapphire, it changes colors in different lights, so cool! Sometimes they look deep purple, sometimes lavendar, sometimes pink, sometimes a combination. I get tons of complements on them.
