Well, I must tell you I am seriously the last of the hopeless romantics on this planet and I will give you an answer on what I would like!
Why not take her back to the place where you first met or where you had your first day! You could make it so romantic, by replaying the whole experience of meting each other and falling in love and I guarantee you it is something she would never forget! She will be happy and so you will be happy too!

Her favourite flower and a night on the town. An amazing gift would be her favourite flower that can be planted in her garden. That way every year it'd bloom and she'd always think of you and what you two share:)
