You'd have to be brought up in the country to know that.
Hay is very soft to lie in, and it was an excellent place to make out.
My cousin lived close to a nature preserve and they had huts with hay for the deer. That was a preferred make out place for him as his mother didn't want him to fool around.
And as you play around you roll around in the hay, so a roll in the hay...

When the farm hand used to do it with the farmer's wife, they would go into the barn where all the hay was kept and they would literally roll in the hay...

if you wer teenager way back when and you didn't want your parents to know you were with the opposite sex did it in the barn (roll in the hay)
