This isn't the place to ask a question if someone's serious health issues are at stake. People who have such issues are usually referred to a dietician by their physician. If the person is not able to manage his own diet usually the dietician or nutritionist will talk with anyone involved in preparing/buying food for the patient. If there is no physician involved for some reason, I would think your local senior center might be able to direct you to someone who knows about such a diet.

The only thing I can add beyond the above is this (because I was on a low-sodium diet for a short time): The food is very, very limited. Frozen vegetables are recommended over canned vegetables. Boiled rice and puffed rice cereal are ok. I remember laughing because I could have something like yellow cake but I couldn't have something with protein, like tuna. To the best of my recollection, "low-sodium" is anything with fewer than 35 grams of it (or something like that). Some foods in the store do have the "low-sodium" labels, so that's something to watch.

Having noted those few things I do know about such a diet, do a search for "low-sodium diet", but then also please find a professional who will give you the diet on paper. Iron is easy to avoid; sodium is trickier.
