A convectional oven has a built in fan, situated directly opposite the door of the oven. Its purpose is to spread heat evenly and thus allows you to bake or roast on two or more oven shelves simultaneously.

In a good convectional oven there (for instance) should be no difference in taste between cookies baked on the top and middle oven shelf, because the fan is highly effective.

Obviously a conventional oven doesn't benefit from having a fan & you'd have to (periodically) turn your cookie tray around while baking to ensure even baking & browning.

A convection oven uses a fan to distribute the heat more evenly. Food in a convection oven gets done faster and tends to get crispy on the outside while remaining soft on the inside. It's really good for roasting. Now you made me hungry =D

a conventional oven uses heating elements or gas jets that are mounted in the oven to heat it up. Convection ovens also add fans to evenly distribute the heat. Convenction ovens also bake or roast faster than conventional ovens.
