Plywood is better. But will cost you more. CDX is made with glues that are suitable for exterior applications. 1/2" should be think enough, but not any thinner. Particle board and OSB are OK, but not nearly as durable when it comes to the elements.

Particle board is a defective product. In reality, it is a very slow-moving liquid that will eventually sag between the trusses, and has been shown to perform in a substandard manner in homes damaged and subsequently inspected after Hurricane Andrew.
Plywood is an effective product because of the manufacturing method. Thin layers, or "plys" of wood are laminated together, and this cross-grain effect gives it an enormous amount of strength and durability.

Plywood has a grading system A through D, to help you select the proper product. An answerer mentioned 1/2" CDX, which is most likely the right product for your application. This means one side is graded C, one side D, and is designed for exterior application. In order for the plywood to be a component of a durable roof system, take care to properly fasten the plywood to the trusses or rafters.

Particle board is not allowable for roof sheathing. Use 1/2" CDX plywood or thicker.

USE PLYWOOD. 1/2" CDX or better. Don't use particle board. It will not hold up to the heat.

Plywood....always. If particle board gets wet it will come apart.

I have used both ply wood and OSB , oriented strand board, both will work. Particle board wont even make a shelf. Have used particle board for a sub floor , but I don't care for it.

Plywood !!!! particle board will melt if it gets wet,waferboard will also seperate if it gets to wet..
