It ultimately depends on you. Go to your local music store and ask to try out a guitar. Just pick any one. Play around on it for 5 or so minutes, and if you like it and it feels right to you, the guitar is your answer. Do the same thing with a keyboard. Personally, I found the guitar easier than the piano. It's just my natural talent. For you, you might find the keyboard easier, or a different instrument, like a flute. It all depends on your preference.

They are actually identical. I play both. I learned guitar first however but piano seemed to be easier then I realized they use they same notes and octaves. Scales versus Frets.
the hand do operate independent and in unison depending on what you are playing and your style. I have been playing both for 20 years
Neither is truly harder than the other. Both require you to be a bit ambidextrous as you will strum with one hand (guitar) and hold chords with the other
piano both hands are chords and notes. It is preference really my lil bro only like piano.
