Best thing to do is ask around friends and family if any of them can recommend good builders .Get two or three quotes and don't chose the cheapest .....it's not necessarily the best. Rebuilding existing walls is cheaper than new walls because the stone is already there.Agree a price with the builder before they start and only make stage payments.don't give him any money in advance of any work being done.Don't forget, you are only paying for the mortar and labour not the stone so let the price reflect that.

It really depends on where you are located. I do this as a hobby since I get bored easily I also build fireplaces mail boxes and retaining walls I live in Alabama and charge nothing but lunch. I also do other restorations in Carpentry and hand carve pieces to restore furniture.
