Which format does an illustrator use to deliver final illustrations to a book publisher?

Lets say the specific area is scientific illustration.

It depends on how your doing it. If it's a hand drawn illustration then scan it (or have a pro scan it).
If it's color then save it as a CMYK .eps file. If it's black and white and has screens or shading then save it as a grayscale tiff, if it's B&W and is just line art with no screens then save it as a BMT(Bitmaped tiff).
If you're drawing it in a program then save it out as an eps file. A jpeg is a compressed file and you may loose quality.
All scanned and saved images must be at leats 300 dpi (dots per inch).

Publishers can use a variety of digital files, most have a personal preference so it would be best to ask the publisher which they prefer. Generally EPS or PDF are the most accepted.
