its a historical joke about king alfred the great when he was in hiding. he was looking after the oven for a woman whilst he was trying to resolve how to defeat the vikings. the cakes burnt and he found the answer. to eat the cake he took away the burnt bits but it left only a small piece of cake.
therefore he had the answer and a small piece of cake.

pretty much what everyone else said, it's easy to eat cake. Easier than, for example, a tough cookie/ tough nut to crack etc.
