Does your music have to be classical or jazz, or just instrumental? If so, you could always try Dave Brubeck's album Time Out. (Besides having "Take Five" on it, which practically everyone has heard and likes, everything on the album is in unusual time signatures which could lead to some interesting routines.) Jan Garbarek would be another interesting choice, he's got a sort of chilly sound. (Pun not intended.) Classicalwise, Vivaldi's Four Seasons might work for you.
If they don't have to be classical or jazz, look at movie or even anime soundtracks. Plenty of tracks that are the right length, and it shouldn't be too hard to find something that sounds all right and that people haven't heard before. Karaoke CDs are an interesing idea, but karaoke tracks tend to have the main melody line missing (the vocalist isn't "replaced" by an instrument) and so aren't satisfying alone.

Johann Pachelbel's Canon in D Major is fantastic - it's what I walked up the ailse to!

It has been played 100's of different ways by 100's of different bands. But it is a great upbeat jazz song.
