The food that astronauts consume in space variety wise is pretty much like the food on earth BUT it's in a dry formed block type as far as consistency.
Have you ever like had a piece of dry wall and seen how it looks when it's broken. Like formed, but like with rigids and such like that? That's what a chocolate, vanilla, strawberry ice cream is like in space.
How do I know- I've eaten it before (as have many others who've visited a space museum) and I have an aunt and uncle who are both supervisors at NASA for shuttle missions.
Plus you can also visit space museums and actually purchase food like that in the gift shops.

The food is freeze dried. You can buy some online at
johnsonspacecenter.com (It tastes like it's very "chalky") Almost like chalk.
They have freeze dried strawberries, peaches, even ice cream. I tried a lot of it the last time that I was in Houston, TX. (At Mission Control- the Johnson Space Center).
It was a cool trip. (Even if we were evacuating from Hurricane Katrina- but I'd also been there before then, too.)

Astronauts eat dehydrated food. That is any food that the water can be sucked out of and dried (dried fruit, cereals, salted meat and dried meat etc). The dried food is reconstituted by adding water to it and then eaten

actually speaking astronauts consume all great stuff what we eat @ home!!!!!!!!.'his gotta shock ya but it's a fact.the food packed is run to proccesser to break it down to smaller particles, they are then de-hydrated( water being removed to lessen the mass).this is to supplement them to avoid fatigue. the food items come in various flavours & diff. kinds of stuffs. i hope ya liked it

My mother-in-law bought me back some freeze-dried and vacuum sealed neopolitan ice-cream from the Kennedy Space Centre. I would advise against it, but they probably have it for desert.

Dried food.
They can't eat too much liquid food coz the waste will be difficult to dispose of and also they want to minimise the times they go to toilet.
