The ostrich is the world’s biggest bird but it is unable to fly. There are almost 2 million of these birds worldwide. The ostriches in the Klein Karoo are of the Struthio camelus variety, which is the only species which is not found in captivity. A well – built male will reach a height of about 2,4 meters and weigh up to135 kilograms. When fully grown an Ostrich has one of the most advanced immune systems known to mankind.

Though it has many strange habits, ostriches do not bury their heads in the sand. This myth probably arose from its practice, when threatened, of flopping to the ground and stretching its neck flat so that it merges into the landscape.

An ostrich poses a formidable kick, though for defense it relies mainly on speed – over short distances it can reach up to 64 kilometers an hour. It can maintain this speed for up to 30 minutes, making ostriches the second fastest animal in the world. An ostrich lives for about 40 years. Although the birds are generally docile, the male is temperamental during the breeding season. When agitated it makes roaring noises almost like a lion, displays its feathers, dances and bows before the hens, and its skin turns bright pink.

Pairs of birds often remain together for life. Hens lay clutches of up to 20 eggs in hollows scooped out of the ground and the chicks hatch after about six weeks. Parents are protective, constantly on the alert for jackals, hyenas and wild cats.

Since the First World War, many other commercial uses for ostriches have been found outside that of the fashion industry. The Klein Karoo Agricultural Co-operative not only runs international feather auctions every six weeks, but also tans and processes ostrich skins into fancy leather handbags and shoes. Leather from ostrich skins is the strongest commercial leather available to man. Biltong (dried meat which is eaten as a snack) is also made from the flesh and the bones are turned into bone – meal – the only such enterprise in the world. There is also a growing demand for the eggs – each egg being the equivalent to 24 chicken eggs.

Recently the demand for ostrich meat has also risen. This is because of the fact that it is a red meat and is very low in cholesterol, calories and is almost fat free.
Two of the original ostrich farms, called Highgate and Safari have been turned into show farms for tourists. Both are located a few kilometers out of Oudtshoorn on the R328 to Mossel Bay and are worth a visit for the rides they offer where you can feel how it feels to sit on an ostrich’s back.

It should be clear by now that ostriches are an extremely resourceful species. On top of all this, ostriches are also recognised as one of the only "Environmentally Friendly" animals in the world
