If, when you turn on the defroster, the windows fog up, you may have a leaky heater core,, it looks like a small radiator and is under the dash to supply hot air once your engine warms up. The air conditioner also runs when you hit defrost to remove condensation form the air. If you live in a cold climate, it will further chill your windshield when you start the car and try to defrost. Best bet is to let the engine warm up for about 5 mins and then put the heat to full on and the selector to defrost,, this runs the air through the AC first to remove the condensation, then heats the air to defrost. If you get a spray of fog, you may have a leaking heater core.

Find out why your car is humid first. Leaky taillights trunk gaskets allow water into the trunk and under the spair tire. Does the passenger floor ever get wet when the a/c is on? Repair drain hose from the A/C. I dry out cars by leaving out in the sun windows door and trunk open.
Morning foggy windows run the a/c or defroster this will dehumidify the interior. Rear window defogger is a window heater and that will also help.

let the car run and turn on the defroster, it will take awhile before it starts to clear because the engine must get hot first to allow warm/hot air to blow through the defroster.

Squeegee all your windows first, then turn on the defrosters. Squeegeeing windows first defrosts the windows a little faster.

I always turn on the A/C to as cold as possible (even in the winter), then switch the vents so they are blowing on the windshield.
