I have not tried this - but can recall from my old chemistry lessons...

If you heat 90% proof c2h5OH with olive oil and slowly cool it to 15c and shaking it constantly, so as not to form crystals - the olive oil should dissolve. Obviuosly you can try adding various additives (like a detergent) it shall dissolve as well.

With the heat process, be careful as ethyl alcohol is very flammable -

It may need addition of some surfactants to get the olive oil dissolved in ethanol. You may also try the dissolution with the help of a microwave or an ultrasonic bath. Warming with a flame is never preferred, because the ethanol vapours may catch fire and cause accident.

Ethyl Alchohol is a non polar solvent with low di- electric constant than water. Obvious method is warm shaking or boiling the mixture of olive oil and etoH
