My boss promised me job security while I was out on long term disability leave due to a high risk pregnancy. One month later she gave my job to her bestfriend, a less qualified man.... They offered me a crappy job with less pay. Will an email stand up in court? Will a laywer be able to get the email now that I'm locked out of my work email account?

In truth no one here on Yahoo can competently answer your question. There are too many legal issues invovled that require a level of specialized law expertise that is best handled by a lawyer.

If you follow advice here you may only make matters worse.

A lawyer can subpoena the business to produce the email.
However, decide if you want to pursue this, as the process can weigh heavily on you.

It may be sufficient to have a lawyer talk to them - be clear what kind of compensation you are asking for.

In the meantime, you should look for another job elsewhere, since either way, it's not a good idea to go back.

While email's are written agreements there has to be witnesses and whatnot.Since you are locked out they prolly deleted that account so the e-mail is gone.
Also,are you sure it's your bosses fault cause most bosses have a boss and if they tell them to do something they gotta.

Oh.
If it's an email, then you DEFINITELY have a chance. I think they'd be able to get to it, as long as it hasn't been deleted.
