Oh, I love most of these songs!! (don't forget "Loves Me Like a Rock" by Paul Simon or "Mother and Child Reunion")
I guess my top five would be:
5. Bridge Over Troubled Water (Your time has come...to shine)
4. Mrs. Robinson (Laugh about it, shout about, when you've got to choose)
3. The Sound of Silence (Hello darkness my old friend...)
2. Scarborough Fair (She once was a true love of mine)
1. The Boxer (All lies and jests, still a man he hears what he wants to hear and disregards the rest)

"Bridge Over Troubled Waters" is considered the best by most fans.
Two interesting facts are:
1) Paul Simon thought this song was a "throw away". Not that big a deal. He could care less if it was used on their next album. He thought Columbia Records was out of their mind to release it as a single and to name the album after this song. He thought no one would find this song very attractive.
2) Previous to the release of the album, Simon & Garfunkels contract was due for re-signing. They negotiated for a new royality rate of $1.25 for every album sold. This was the highest rate at the time.
These 2 events resulted in making Paul Simon extremely wealthy and afforded him the artistic freedom to pursue his solo career without any interference. Art Garfunkel did not suffer either even though he had no songwriting royalties that Paul received. I can only imagine this led to their acrimonious break up.
