Vitamin C is a water-soluble nutrient and vitamin essential for life and for maintaining optimal health. It is also known by the chemical name of its principal form ascorbic acid.
It is a weak acid, called ascorbic acid or a salt ascorbate. It is the L-enantiomer of ascorbic acid The D-enantiomer shows no biological activity. Both are mirror image forms of the same chemical molecular structure, see optical isomers).
The active part of the substance is the ascorbate ion, which can express itself as either an acid or a salt of ascorbate that is neutral or slightly basic. Commercial vitamin C is often a mix of ascorbic acid, sodium ascorbate and/or other ascorbates. Some supplements contain in part the D-enantiomer, which is useless and harmless. Vitamin C ( or Ascorbic acid) is a natural occuring vitamin found in fruits and vegetables that is responsible for the formation of collagen (a substance that holds bones and joints together)

The deficiency of Vitamin C causes a disease known as
"scurvey" in which the extremities become soft and swollen. There may also be gum changes and loose teeth.Also bleeding may occur under the tissues.

Fortunately Vitamin C is plentiful in fruits and vegetables and in Infant formula so that Scurvy is extremely rare in America.
(However it is inactivated by cooking so pasturized Orange juice usually has Vitamin C added to it)
(Use to occur on long ship rides across the Atlantic-- so sailors would eat Limes to prevent scurvey and would be known as "Limey')

There have been some scientists that have claimed that high doses of Vitamin C can prevent people from getting sick from the "common-cold". One notable scientist who esposed this theory was Linus Pauling who won a Nobel prize in Chemistry.

There is a complication of too much Vitamin C-- known as "oxaluria" in which the kidney ends up making kidney stones form Calcium Oxalate (a breakdown product of ascorbic acid)
