Can someone in a florida probate hearing ask for income tax records and bank records.?

My mother in law is asking for these items. This is in Florida.

You can ask for anything you want to. It's up to the judge to decide if it's potentially relevant if you fight it. If it's relevant to the estate the judge is likely to issue a subpoena. Since one of the reasons for probate is to identify all of the assets of the estate, financial records certainly would be relevant.
