Monotheistic is the belief in one god. Christianity, Islam, most of the major religions of the world are monotheistic. Polytheistic is the belief in many gods. The religions of the ancient Egyptians and the Greeks and Romans would be an example of polytheistic cultures.

Monotheistic (or monotheism) is belief in a single god or goddess (generally a god though)

Polytheistic (or polytheism) is the belief in multiple gods and/or goddesses.

to define them the simplest way is to break down the word into its core parts:

monotheistic => mono + theistic (theism) => one + belief (in god)
polytheistic => poly + theistic (theism) => many + belief (in god)

therefore monotheistic means you believe in one god (i.e. Christianity)
whereas polytheistic means you believe in multiple gods (i.e. the Greek Pantheon)

Mono means one, and theistic refers to god, so the whole word means belief in one god. Poly means many, so polytheistic means belief in many gods. You should have asked this in the religion section.
