It's named the Cover 2 because the two safeties cover the deep zone, each covering one-half of the field. Usually the two corners and the three linebackers (if you're in a 4-3) cover the short zones, each covering 1/5th of the field.
Actually a very good explanation of it at ESPN's website on college football.

Cover 2 is simply for the safeties. They have deep zone coverage each taking half the field. Linebackers and corners can either play man-to-man or zone coverage, or even blitz, but cover 2 is just a scheme for the safeties to help take away the big play.

Thats tampas defense. All I know is that it is four down line men, three linebackers drop back into zone coverage of the middle. The corners stay in the zone close to the line of scrimmage and the safetys drop back into a deep zone. Its all zonecoverage.

the terrific thank you to triumph over a hide 2 protection in 8 on 8 flag soccer is to run a lot of slip monitors(the place the lower back slips the block and then runs a quick out direction), and medium variety sideline routes.

it really depends on what set you run the cover 2 out of, but it mostly means that the safeties cover deep halves, meanin they split the field side to side in half and cover their half
