As I'm talking to my fiancee she might start to get happy and excited about something she's talking about, say a joke or a funny story, then she'll look at me hoping I'll respond with the same high level of energy and excitement about the issue. I'm entertained, but not as excited about it as she is. I don't know what to do, so I smile really big and laugh a little. If I don't say anything it would make her feel uncomfortable about herself. She sees that I don't share the same excited energy and begins a slow retreat to end that conversation, which sucks.

You can't help it that you do not always respond the same way that she does to things, but it is great that you care so much about how that might make her feel. I'm sure you think she is adorable when she gets that happy glint in her eye, and love her excited smile, so tell her that. The next time this happens, say "I just love seeing you get so happy, excited, ect. It is so cute". She will learn she doesn't have to feel self-conscious or silly around you, and you are telling her that, even if the joke or story is not important to you, SHE is.

Try to interreact with some other couples so she can see that everybody is different. My wife gets all excited over talking with relatives on the phone and I am not that interested as I am trying to survive another day in one piece. Talk with her and spend some time with other couples and observe. Once she understands the differences that exist in people she may take a more mature outlook on the matter. Historically and genetically women are more of a social, outgoing, visiting type creature. Men usually aren't as talkative or social.

That's an easy one! Just tell her how cute you think she is when she gets excited about something.
