Evil is performing actions in the knowledge that those actions will cause harm, either emotionally or physically, to others.
Some would argue that actions which benefit some at the expense of others are not evil. It is really up to the individual as to where the line is drawn between harm to some and benefit to others.
Some examples;
A man steals the property of another man purely for his own benefit. This act is evil.
A man steals food from another man in order to feed someone who needs it more. Although the act of stealing may be considered evil some may feel that the end justifies the means.
A hurricane blows through a town killing some of the populace. This is not evil. The hurricane is a natural phenomenon and has no intent. Those with religious belief may call the act evil, believing that an evil presence directed the hurricane.
