He was certainly a composer, so I am not sure if the free-form nature of true jazz would really be what he would venture into. He may take jazz elements (rhythm, tone, instruments, etc.) and incorporate it into his music, but I don't think that Jazz would be where he would focus.
I think that he would probably go into the realm of electronic music-- when you are writing music for 88-piece orchestras imagine how fulfilling it would be to be able to hear it produced as you are writing it. Not only that, but you are no longer restrained by what sound is being produced by each instrument or by what the person playing the instrument can physically do. He would actually be able to arrange pieces of music in ways that were impossible in his day and I can only imagine what he would be capable of creating.
On top of that add to his nature for writing operas. Would he also be producing musicals? Like a modern Andrew Lloyd Webber? Or would he also venture into the realm of the music video alå 1980s/early90s MTV or even full length movies like "Fantasia," "The Wall," or "Yellow Submarine?" Perhaps it would be performed in some sort of arena or huge concert hall. I would wager it would be truly amazing and absolutely beautiful.
Obviously we can never know this, but we can draw inspiration from him and then use that to influence our music of today.

You know, that is a very good question.
From what I've learned about Wolfgang Amadeus Mozart, he was an innovator, a non-conformist.
My guess is that he'd find some kind of blend between sampling (like the rap/hip-hop community uses) and twist it with a lot of computer-generated tones, add a dash of jazz (I agree with you on that, cause he liked free-form music) and probably put it on stage dressed down in a punk style.
Think: Sex Pistols meet OutKast with Herbie Hancock and Emerson, Lake & Palmer on the side.

I think if Mozart was alive today, he would've evolved musically and he might compose folk and acoustic type music.

Probably hip-hop. It would have to be danceable. And it is "showy" enough to suit his style. I think he would have sat back at a table, ordered a drink, and laughed watching all the keds dance to his outrageous music, and it would have thrilled him. Of course, he would have taken hip-hop to the limit, and eventually it would sound nothing like it would have in the beginning!
