other than a lawyer or a judge...anything police related would be optimal

that is actually a tough question to answer. When I started out in college I was working on my Criminal Justice Degree and then decided to transfer to a Business. After doing some research I found that police really don't make that much for puting their life at risk each and every day. Probation officers only make a 3rd of what their clients pay in. My suggestion is a state trooper or county police officer. Or have you ever thought about being a Private Investigator?

You have a law degree but you don't want to be a lawyer, so I would recommend work as a consultant for private firms as an intermediary between them and a regulatory agency. I apologize if that sounds ubiquitous, but I mean you can consult on EPA policy, on OSHA policy, transportation policy, things like that. While it's still a legal function, you are not a lawyer in the traditional sense of dealing with civil and criminal law on a day to day basis. You'll find that you can make more money simply by getting with a large firm and working your way up over time as an attorney, though.
