I've always wondered this.

Its the count of the music...If you read the music sheet to a song...they are cut off into eight couunts...sometimes 4 sometimes 6. It is the count to the music....thats what you dance to and thats when you know when to begin. Every sone has a certain number of counts....bars....they complete it. Kind of like a poem...with certain number of llines per poem and certain number of words sometimes. ...on the one count.....Hope this helped.

8 count in dance originated from 8 count in music.

Humans like symmetry in everything, including audible sounds. Also, humans have their heart that beats with certain rhythm. When music corresponds to this rhythm, it somehow is appealing to humans. So, certain repetitive patterns is music appeal to humans. It is only a matter of taste how to brake it down.

However, why 8? Maybe because we have 2 legs, and 8=2*2*2 works very nicely :-)
It is actually more than 8 count: if you listen to music more carefully, you will find longer phrases that include a number of bars (those 8 count pieces).

Most music is written in 4/4, but 4 is too short to do anything so they tacked on another four making it 8 counts.

Waltzes are in 3 because the waltz music is 3/3
