Could be a bad sensor. Does the engine run hot? If so then you could have a clogged radiator or bad water pump (poor circulation). If not, just get the sensor replaced.

If the low coolant light comes on. It means the water in your radiator is low. Or the sensor is malfunctioning. Check the coolant reservoir toward the front of the engine. If no water or antifreeze is there. Fill it up. If it's full, unplug the two wires going to the sensor. The light should go out. If it does, it's the sensor.
Sometimes you can jiggle the sensor and it will loosen up. Do not open the radiator cap if the engine is hot. Let it cool off and then check the water level. Good luck

I've got a hunch you've got a goofed up sensor. Also, just to be on the safe side, buy an anti-freeze tester at an auto parts store to see if your antifreeze is up to snuff or not. They only cost a few bucks and its always piece of mind to know your coolant is in okay shape.

did u check it when the car was running?? you need to check it with the car running, but not hot, like first thing in the morning, start the car, check the coolant. coolant circulates through the motor, heater and other systems, if you're checking it when its not running, you're doing it wrong.
if its actually full, you may have a sensor out and might need to take it in the a mechanic and have it checked.

Just because it's full doesn't mean it's still good. You're suppose to flush the coolant system every 2 years. If you haven't done it in 2 years, you should take it to a mechanic and have him/her change the anti-freeze.

tape the sensor on the side of the reservoir sometime u will get air pockets there if the light does not go out change the sensor.to find it just look for wires going into the reservoir

it sounds like the sensor has gone bad or your cooling system has build up in it. the sensor i beleive is located in the overflow bottle and can be picked up at the local parts store
