I find myself talking with my hands from time to time, but only when it is necessary to stress something that I am saying or to make a point. I am not one of those people who constantly have their hands moving when they are speaking. Yes, that bugs me.
I find myself paying more attention to the movement of their hands than to what they are saying.

I find I use my hands a lot at work when trying to explain something or stress something to someone (especially if I know they're not listening anyway but want my undivided attention and expertise) - I find curling my hand into a fist tends to get their attention tho! (just kidding)
