Medium rare or rare but no one seems to understand that rare is supposed to be warm on the outside, cool in the middle around this area so when you order a rare steak here, you actually get medium or nearly medium (closer to rubber)

Medium to well done.
No blood at all, kinda crispy on the outside but moist and tender on the inside.
Make sure mine's done on the char grill plate - mmmmm.
That way it doesn't need marinade or sauce. It's perfect just the way it comes off the hotplate. If it's scotch fillet, even better!
Can I have some burnt onion to go with that too please?
