Roatan Island, Honduras, beautiful, laid back, and a lot of Europeans and Americans in one part of a town. The people were very friendly. There was jungle there too. Not a whole lot to do beside the beach, but the beaches make it worthwile. Very relaxing and cheap as well, especially if you fly from Houston or Miami.

Ponta Mamoli in South Mozambique. 111 km beach with 1 lodge that accomodates max. 30 people. When we were there it was 13 (11 divers and us). We had the whole beach to ourselves, discovered a turtle-nest, went horsebackriding etc. This place makes you feel as if you're alone on the planet! Stars like you cannot believe, peace and chalets that are situated on top of a dune, 20 m from the ocean. No glass windows, just mosquito nets. You hear the Indian Ocean all through the night! BEAUTIFUL!!!!

My husband and I went to the Highlands of Scotland for spring break this year....it was gorgeous, and snowing even in April, so it gave us lots of excuses to snuggle. It was so nice to get away - really AWAY - from everything and spend time just the two of us.
