I am thinking I want a SUV or SUT, but I want good gas mileage, good AC and Heat control, decent towing capacity, four wheel drive, and my budget is anything under $7K. What are some other good things to look for in a car, or a what car would be good for me based on this info?

There are several cars that fit your requirements. However in getting good gas mileage and towing capacity/4WD will diminish that considerably.
If you can live with 22-23 MPG on the highway then you can get all the above.
Try the Jeep Liberty in the SUV vehicle category. I have owned one and the 2002 model should fit you budget. My highway mileage was as high as 23 MPG.
If you prefer an SUT try the Ford Explorer Sport Trac. A 2001 should fit into your wallet. I currently own one of these (2004) and it gets a consistent 22 MPG. Both vehicles were modified with high flow air filters and Gibson Cat back exhaust systems to get this mileage. Both have excellent AC and heating systems, which I have used extensively being a desert explorer.
Another suggestion is to find a Diesel powered 4x4. The Liberty came out with one in 2005 but it would be beyond your price range.

It is going to be real difficult to find an SUV or SUT for $7,000 or less. If you were in the market for a new car however, some manufacturers such as Toyota offer hybrid SUVs that get about 20 MPG.

HAHAHA I want a job where I can work 2 hours a week from home and make a billion dollars a year! All trucks are horrible on gas, unless you buy an Escape Hybrid or a Lexus RX330h hybrid. Can you afford either of those? I would suggest you buy a Honda Civic. Great on gas and very reliable.

Go to the car lots, and look around. Be sure to save a little of your budget for the gadgets you want for your new car. Every one wants to dress up the first ride.

Have fun, if you are careful when you shop you should do fine. I won't recommend a brand or style, because it's like trying to choose clothes for someone else, My taste and yours could be vastly different.
