Bacteria which ferment the medium in which they are present (mostly food) by ingesting sugar and releasing alcohol / mild acid and carbon di oxide (bubbles of which give that 'leavening' or 'fermentation' effect on the food / medium).
The most common example could be taken of saccromyces cerevicia or the bacteria found in yoghurt or curd because of which it turns sour and more volumnous. (Also if kept for long in ambient conditions - conducive to growth of bacteria - turns completely off and shows bubbles clearly.)

fermentation means Anaerobic breakdown of complex organic (sugar) substances into simpler inorganic (alcohol) substances with the help of bacteria or yeast..
Anaerobic means wothout oxygen..
Any bacteria which helps in fermentation process is fermetation bacteria...
Good example is sauerkraut which is fermented by Lactic acid bacteria...

Depending on the kind of fermentation bacteria used at the time of fermentation treatment , if the fermentation bacteria is aerobic, fermentation treatment is performed in the air ambient atmosphere, and if it is anaerobic, fermentation treatment is performed in the predetermined gas ambient atmosphere which is exhausted of air.
