Hey Dude..., U should chk out Fruityloops. It deosn't need a Midi keyboard to play n create music. Its pretty easy to handle. Might take some time to get used to it but once when u dip ur feet in the water u can start swimmin easily.
Fruity loops has a pianoroll window which is one of its best features. It allows u to place notes..which would b played when the track is played. I really don't know how to xplain it. But all i can tell u is try Fruityloops n i know for sure that thats what u r lookin for. Have fun.

There is a whole variety of those - you can use Cakewalk (modern versions called Sonar), Cubase, or even Fruity loops to record music without playing it on a keyboard. These programs also have a great choice of instrument colours and can reproduce music you write quite good.
For music notation, you can use Sibelius or Finale - great for writing scores, also can reproduce at a fare quality.
