Is it Ranma? And if I'm not mistaken, he'll turn into a girl if he's splashed with cold water. He'll turn back into a boy when splashed with hot water.

This is a comedy anime and manga that is about a boy named Ranma Saotome who was trained from early childhood to age 16 in the martial arts, and who becomes a girl when splashed with cold water (and is turned back into a boy with hot water) due to a magic curse.

It's Ranma 1/2 all right. Ranma turns into a girl when he is doused w/ cold water and reverts back into a guy with hot water.
