Marinades for boneless fish, cut into chunks and skewered. Marinade with the fish some peppers, onions or corgettes and skewer alternatively. Frozen fish (thawed) is very good for this and is handy as it is cheaper and you can keep in freezer until a nice day.

1) Olive oil, lemon juice, herbs of your choice, pepper.

2) Olive oil, soy sauce, chopped chillis, garlic

3) Olive oil, soy sauce, fish sauce

4) Olive oil, garlic, half tsp turmeric, 1 tsp cumin, 1 tsp mustard seeds, 1 tsp cayenne, half tsp corriander

5) olive oil, quarter glass ginger wine, eighth glass soy sauce, 2 tsp sugar

6) Oliveoil, 2 tsp apricot jam, 1 tsp soy sauce, 2 tsp crushed corriander seeds.

All of these recipes are fab and impressive.

You can do these with veg and meat as well

All the best. ENJOY

Mackerel Pate -
May sound minging but I thought it was lovely plus it is something different ! Peppered mackerel fillet mashed add a table spoon or two of natural yoghurt and a dash of tabasco or hot pepper sauce (wee bit) and a squirt of lemon juice - mix together and its gorgeous. Serve with salad or crisp breads etc.

Or how about the Grilled Vegetable Kebab - Peppers, courgettes, mushrooms, onion etc maybe a bit of quorn in between ? BBQ and serve with a decent balsamic vinegar - got to be a decent thick one though. mmmm yum.

I know what you mean been veggie for over 16 years now.....

Fruit kebabs : Use any kind of fruit (banana, kiwi, apple, pineapple etc work best) Cube them into bite size pieces and put them on a skewer. Drizzle with honey, golden syrup or brown sugar. Wrap them in foil and put on the bbq for about 5 - 10 minutes. Then eat they are scrummy.

Banana split : Peel a banana, slit it longways down the middle put chocolate buttons in the middle, wrap in foil and put on the bbq for 5 - 10 minutes. Gorgeous!

This recipe will FLOOR YOU! Take a salmon steak, place it onto foil and add butter, salt, pepper and mixed herbs. HERES THE BEST BIT. Take a miniature bottle of Drambuie and add to the parcel. Seal the parcel well (nothing can escape) and place on the b-b-q for about 20 minutes. ENJOY!

Haloumi Kebabs

Chunks of haloumi cheese, on skewers, interspersed with quartered mushrooms, pieces of red onion and cherry tomatoes! Be sure to coat it all in olive oil before you put them on the barbe and try not to let the cheese drip down onto the coals! Delicious.

I agree with the above- make kebabs with haloumi cheese. Also sweetcorn with lime and chilli butter is yummy- brush the butter on for the last min or 2 of cooking
