1. Any low reactivity metals : Cu, Ag, Au, etc...
2. Most of the non-metals : H, S, B, N2, etc
3. Noble gases
4. Most of the salts that were formed by a stronger acid (sulphates, etc), except when a precipitate could be the product
5. Acids
6. Most of the organic compounds
of course, in part some of them react with HCl but so little that the reaction is considered as unachieved

It depends on what you mean. If you are asking for what elements will not react with hydrocholoric acid, then it would be unreactive metals like gold, silver and platinum.
A substance's tendency to react with hydrochloric acid (or any acid) depends on its reactivity.

nothing is truely immune from anything. either it reacts or it doesn't, but in most cases the reaction is so slight it barely registers
