What would happen if death did not exist?

There would be other alterations to reality that would have to happen to support this fact.
As per your example "what would happen if a man jumped off of a cliff?"

A man dies from the impact from jumping off of a cliff. His brain splats and his bones brake and blood goes everywhere.

IF death didn't exist then this reality would have to change. The man wouldn't go "SPLAT" and his brain would still be intact and his bones could still break but could not be enough to kill him.

For death to not exist you must cleary defin Life.

Death may not exist in that situation but quadrapelegia probably does. Then he'd be living the rest of his life with nothing from the neck down except memories and dreams.
Sad thought really...

The reality of death not existing is hard to imagine so my answer is he would jump and be able to fly. If death doesn't exist then man should be able to fly, at least that is the way I would want it!

he would either land on the ground, with not even a scratch and walk out of there, or he would be horribly disfigured and waddle out of there on his remaining pieces of his legs

Only angels live for-ever, so he will be a dead angel. Some-times angels do die, and they eventually wake up after a period of time.
