It's called a preview or test screening. Basically, it's some sort of a movie demo conducted before its general release, in order to gauge audience reaction. Preview audiences are selected to obtain a cross-section of the population, and are usually asked to complete a questionnaire or provide feedback in some other form. Harold Lloyd is credited with inventing the concept, having used it as early as 1919. Feedback from a test screening may be used to improve, or at least alter, the movie before it is released.
Harry Knowles is infamous for going to them, and his website, Ain't It Cool News is notorious for determining whether a soon-to-be-released flick will be a hit or a flop just by his mere speculations. Check it out at:

Well one day after school I went to the Mall of America to have a few beers and scope things out and these people got me to sit through a 5 minute preview of a Crocodile Dundee movie and it was the worst piece of garbage I had ever seen. They then proceeded to give me a "survey" about whether I liked it or not. I said it sucked so they made me watch it again. It was worse the second time.
