I have always wondered the same thing about FUDGE. It is such a complicated process to make it turn out right. Was the first time fudge was made, was it an accident? and the poor person that did it tried for years to make it happen again so she could write down the steps? And even today, we have a hard time making it just right. One second undercooked, and it's just ice cream topping. One second overcooked and it's taffy.
