Chinchillas are easier to handle, overall, as far as personality.... the downside is that with their fur, they constantly need a dust bath available to rid their coat of the oils they pick up from various places, including your hands. Still, totally chinchillas!

I breed chinchillas and have owned degus. I would say chinchillas especially if you have children. Chinchillas bought from a breeder hardly ever bite and when they do it is hardly ever serious. Degus will bite to the bone. Also, a little known fact about degus is that they have something in their saliva that can give a very bad reaction to humans. I have been bitten by chinchillas and it heals just fine. I had a degu bite and it swelled up my whole hand and didn't heal completely for months. Once I had such a bad reaction I started asking around to degu breeders and found that degu bites are very serious. Its not uncommon to have your entire hand and arm swell from a degu bite to the finger.
I don't hesitate to let me children handle my chinchillas but there is no way I would ever let one handle a degu. If you do want a degu be sure to get it from a breeder that has handled it a lot!
Also, degus are much worse chewers. You will require an all wire cage for a degu. It will eat out of anything else!
