Because that is the color of the National Team, called "Azzurri".
That is an historical tradition: before the creation of the Italian Republic, the Italian Regal Family (Savoia) had color "azzurro" (kind of blue) in their flag and that color was adopted by the soccer National Team to respect the Regal tradition.
Since then the color has been kept in the Italian shirt, even though it is not a color present in their National flag (green, white, red).

Sky blue was the color of the Royal House of the Kingdom of Italy. The traditional colour of the national team (as well as of all Italian teams and athletes, except in motor sports) is sky blue (azzurro, in Italian), and therefore national team members are nicknamed Azzurri.

I'm Italian. Because the blue was the colour of Savoia's Family.
I think it's time to change.. but everyone don't think so.

Doesnt really matter. It has become their 'national colour'. Just like Holland. Its pretty cool that their jerseys are Orange but not from their flag. Now they proudly carry the name "oranje"

cuz the shirt is not by the color of the country's flag
but by the color of the country's federation emblem (the thing on the rite side of the shirt) and usualy the federation is the same color of the flag but not always

holland wore orange shirts and their flag is red, blue, and white...same with serbia & montenegro.
Australia wore yellow. Their flag colors are red, white, and blue too.
maybe italy just likes blue.
