Tues and Wed are the best. Saturday's the busiest followed by Fri, then Sun, then Thu. Monday gets overflow from weekend travellers leaving Tue and Wed. :-)
Also, depending on park, you might be able to get in early or get what's called a "fastpass" or something similar allowing you priveledge to ride quicker. Some parks charge for these priviledges and others do not. You didn't mention the park(s) you were thinking of, so I cannot help further at this time.

I have worked for several amusement parks and while everyone considers Wednesday or Monday the best it is really Friday and the reason is in the industry it is considered a transitory day or travel day a lot of people leave on Friday because the motels raise prices for the weekend and a lot of the family's don't come in till afternoon on Fridays ( usually after 5) and they spend the first day getting settled go to the pool etc. A lot of shows ( not in the amusement parks) will have Friday as their dark day because of this.

That's another one for Wednesday.
Another thing I've noticed is that if you plan to take an extended vacation somewhere, with a family or whatnot, the best times to go are shortly after school starts (i.e. November) or close to when school is out for the summer (i.e. May). Most people don't take vacations then. I went to Disney World two years ago in late May, and there were literally NO lines for anything.

I've had the best success on Tuesday's. Many people living close will take a day trip mid-week to break up the work week. Few wait until Tuesday from a weekend vacation but many will start Thursday. Just my opinion and experience.

I would recommend going on a Tuesday, a Wednesday, and a Thursday. Remember that Wednesday is the biggest day for summer camps to visit these locations.

Another good day sometimes is a holiday like the 4th of July where alot of families have get togethers or functions that does not normally consist of an amusement park.
