The edges of my garage roof are rotting away, what do I need to replace them with, and how best should I do that?

Cut back 2-4 ft. Through the roofing and decking. Remove a couple rows of shingles. Put on new decking,drip edge,paper,and shingles. Make sure roof is vented properly.

I need more info to answer this. Do you mean the eave edges? You'll have to do some exploratory demo, to find how much damage you have. You need to get all rotted material out. Roof shingles are installed from the lower end (eave) up. Patching can be iffy. I use Grace Ice and Water Shield for the first 3 feet, under the shingles.

from experience i can tell you that you'll have to do the whole roof.
once you sart disturbing bad shingles, the adjacent ones start going bad right away. sorry, but it's a fact.
if you are the least bit handy, you can go to home depot and they will tell you how to do the roof or you can buy a book there to teach you.

You may need to replace more than just the edges, A complete tear off may be needed, there may be water damage under it.
